Cava is more than fine — good Cava outperforms cheap Champagne every time. Cava uses the same traditional method at a fraction of the price. For a big-budget occasion, spring for grower or Grand Cru Champagne. For everyday bubbles, Cava wins on value.
Champagne — French, traditional method, bready and complex. Prosecco — Italian, tank method, floral and fruity, easier drinking. Cava — Spanish, traditional method like Champagne but at Prosecco prices. All three are useful; none is objectively best.
Plan one bottle per six people for a toast pour, one per two people if it's the wine for the evening. Chill for at least three hours in the fridge or twenty minutes in an ice bucket with water. Warm sparkling is a crime.
